Plenty of hotels put up a “sustainability” page full of good intentions. We would rather tell you exactly what we do \u2014 and what we don’t.<\/p>\n\n

What we do<\/h2>\n\n

We buy part of our supplies from local producers.<\/strong> Burgundy is farming country: it would make no sense to bring in from far away what grows a few kilometres up the road. It also, quite simply, tastes better.<\/p>\n\n

We sort our waste.<\/strong> In the kitchen and in the common areas.<\/p>\n\n

We change linen on request, not automatically.<\/strong> If you are staying several nights and your towels are fine, tell us and we will leave them. It is the single most effective thing a hotel can do about its water and energy use, and it depends on nothing more than a word from you.<\/p>\n\n

What we do not claim<\/h2>\n\n

We hold no environmental certification. We do not generate our own electricity. We have not carried out a carbon audit. A town-centre hotel in an old building has limited room for manoeuvre, and we would rather say so than dress up three ordinary habits as a commitment to the planet.<\/p>\n\n

Where you can do far more than we can<\/h2>\n\n

This is the honest part of the page: on a stay in Beaune, most of the impact is not in the hotel, it is in how you travel. And Beaune is one of the few wine destinations where you can do almost without a car.<\/p>\n\n
