Capital of the Burgundy wine trade, a former ducal town, hemmed in on three sides by vineyards listed as World Heritage: that density is rare. Here is what you need to plan a stay without missing the essentials.<\/p>\n\n<h2 class=\"wp-block-heading\">The historic centre<\/h2>\n\n<p class=\"wp-block-paragraph\">It all starts with the <a href=\"https:\/\/hoteldefrancebeaune.com\/en\/hospices-de-beaune-burgundian-heritage\/\">H\u00f4tel-Dieu, better known as the Hospices de Beaune<\/a>. Founded in 1443 by Nicolas Rolin, chancellor to the Duke of Burgundy, and his wife Guigone de Salins, it cared for the sick until the twentieth century. Its courtyard and glazed tile roofs are the image the whole world associates with Burgundy. Allow a good hour, more if you linger in front of Rogier van der Weyden&#8217;s Last Judgement polyptych.<\/p>\n\n<p class=\"wp-block-paragraph\">After that, simply wander. The cobbled lanes of the old town, the caf\u00e9s on Place Carnot, the Notre-Dame collegiate church and its tapestries, a walk along the ramparts: nothing is far, everything is on foot. On Saturday mornings the covered market is the liveliest place in town \u2014 this is where you buy the jambon persill\u00e9 and the \u00c9poisses.<\/p>\n\n<h2 class=\"wp-block-heading\">The wines, without getting lost<\/h2>\n\n<p class=\"wp-block-paragraph\">Beaune sits in the middle of the C\u00f4te-d&#8217;Or, a sixty-kilometre ribbon of slopes where pinot noir and chardonnay are at their very best. To the north, the C\u00f4te de Nuits and its reds. To the south, the C\u00f4te de Beaune and its whites. The climats of Burgundy \u2014 plots whose boundaries in some cases date back to the Middle Ages \u2014 have been UNESCO World Heritage since 2015.<\/p>\n\n<p class=\"wp-block-paragraph\">Three ways to approach them, depending on how much time you have:<\/p>\n\n<ul class=\"wp-block-list\"><li><strong>In an hour, without leaving town<\/strong>: the <a href=\"https:\/\/hoteldefrancebeaune.com\/en\/cite-climats-vins-bourgogne-beaune\/\">Cit\u00e9 des Climats et Vins de Bourgogne<\/a>, here in Beaune, explains the terroir before you taste it.<\/li><li><strong>In a day, by car<\/strong>: <a href=\"https:\/\/hoteldefrancebeaune.com\/en\/burgundy-wine-route-from-beaune\/\">the Route des Grands Crus<\/a>, from Santenay up to Dijon, stopping at Pommard, Volnay, Meursault, Puligny-Montrachet and Aloxe-Corton.<\/li><li><strong>By bike<\/strong>: the voie des vignes leaves Beaune and runs to Santenay on an almost flat, traffic-free path. <a href=\"https:\/\/hoteldefrancebeaune.com\/en\/cycling-routes-around-beaune-vineyards\/\">Our two favourite loops are here.<\/a><\/li><\/ul>\n\n<p class=\"wp-block-paragraph\">One piece of advice applies to all three: family estates receive by appointment, not by knocking on the door. A message or a call the day before is usually enough, and it completely changes the welcome you get.<\/p>\n\n<h2 class=\"wp-block-heading\">The Burgundian table<\/h2>\n\n<p class=\"wp-block-paragraph\">B\u0153uf bourguignon and snails are not tourist clich\u00e9s here: they are on the menu because people have eaten them in this town for centuries. Alongside them, jambon persill\u00e9, \u0153ufs en meurette \u2014 poached eggs in a red wine sauce \u2014 pochouse from the banks of the Sa\u00f4ne, and a cheeseboard running from \u00c9poisses to C\u00eeteaux. Most bistros in the centre serve C\u00f4te wines by the glass, which is the cheapest way to compare a Savigny with a Pommard.<\/p>\n\n<p class=\"wp-block-paragraph\">Forty-five minutes north, Dijon continues the theme with <a href=\"https:\/\/hoteldefrancebeaune.com\/en\/cite-gastronomie-vin-dijon\/\">the Cit\u00e9 Internationale de la Gastronomie et du Vin<\/a>, housed in the former general hospital.<\/p>\n\n<h2 class=\"wp-block-heading\">Around Beaune<\/h2>\n\n<ul class=\"wp-block-list\"><li><strong>Parc de la Bouzaise<\/strong>, ten minutes on foot from the centre: Beaune&#8217;s green lung, perfect for a late-afternoon breather.<\/li><li><strong>Ch\u00e2teau de la Rochepot<\/strong>, some fifteen kilometres away, whose glazed roofs appear suddenly at a bend in the road.<\/li><li><strong>The Morvan<\/strong>, an hour&#8217;s drive: forests, lakes and trails, the exact opposite of vineyards.<\/li><li><strong>Dijon<\/strong>, 45 km north, for the Palace of the Dukes and the Mus\u00e9e des Beaux-Arts.<\/li><\/ul>\n\n<h2 class=\"wp-block-heading\">When to come<\/h2>\n\n<p class=\"wp-block-paragraph\">Every season has its character: vines in flower in spring, terraces and concerts in summer, the harvest and the Hospices wine auction in autumn, a town given back to its residents in winter. <a href=\"https:\/\/hoteldefrancebeaune.com\/en\/beaune-through-the-seasons\/\">The full season-by-season breakdown is here.<\/a> If you are aiming for the third weekend of November \u2014 auction weekend, and the Trois Glorieuses \u2014 book far ahead: the town sells out months in advance.<\/p>\n\n<h2 class=\"wp-block-heading\">Five practical tips<\/h2>\n\n<ul class=\"wp-block-list\"><li>The centre is largely pedestrian: park once, then walk.<\/li><li>Book estate visits ahead, and agree on a driver who will not be tasting.<\/li><li>Two nights minimum: one day in town, one day in the vineyards.<\/li><li>Many restaurants close on Sunday evening and Monday.
